Green Monster Split Pea Soup

Kids Cook Monday is a movement to include kids in the kitchen with adults regularly, which has been shown to have many benefits: family bonding time and better nutrition chief among them. This fun recipe provides a blast of veggie nutrition, and the fun name (and monster garnishes!) will have your kids asking for seconds!

Green Monster Split Pea Soup

Yield: 8 servings 


1 C carrots

1 C zucchini

1 C yellow squash

1/2 onion

2 garlic cloves, peeled

1 T olive oil

1 C quinoa

1 1/2 C split peas

8 C vegetable broth

1 whole ham bone (optional for flavor)

1/4 teaspoon cayenne pepper

Vegetables for garnish (such as red pepper lips, sliced veggies for hair, and yogurt dollops with olives for eyes)


Adults can cut carrots, zucchini and squash into large pieces. Dice the onion and garlic cloves. Place the olive oil in a sauté pan over medium-high heat. Add the diced onion and garlic and sauté for 3-5 minutes, or until golden brown and fragrant.

Together (adults & kids): Combine the sautéed onions and garlic, carrots, zucchini, squash, split peas, vegetable broth and ham bone if using. Season with the cayenne pepper.

Adults: Bring to a boil, turn heat down to medium-low and simmer for 45 minutes, or until the split peas are tender.

Kids: Carefully rinse the quinoa, until water runs clear.

Adults: Place a pot of water on the stove over medium-high heat and cook the quinoa according to package directions.

Together: When the peas are tender, remove the ham bone, transfer to a blender and puree until smooth. Place a scoop of quinoa into each bowl and ladle the soup over the top.

Kids: Decorate your monster soup using your own imagination! Enjoy!
