Honey Glazed Baby Carrots

Chef Jason Coperine created this recipe for Veggie U, to showcase the delicious carrot. Your kids might get a kick out of making this recipe with the many colorful varieties of carrots available. Purple, yellow, orange, and red carrots will make for a very colorful side dish to encourage reluctant eaters.

Honey Glazed Baby Carrots

Yield: 8 servings


3 lb Assorted Baby Carrots

1 T chopped garlic

1/4 C Extra Virgin Olive Oil

2 T ginger root, finely chopped

2 T  honey

Dried  or fresh tarragon to taste

Salt and Pepper to taste


Pre-heat oven to 400 degrees.

Clean carrots under running water.

Kids can whisk together all the other ingredients except tarragon, salt and pepper, then toss carrots into the mix and spread on a foil-lined baking sheet.

Have an adult put the sheet in oven, and bake 8-10 minutes. Transfer carrots to serving platter, and let kids sprinkle with tarragon, salt, and pepper. Enjoy!
