Black Bean Brownies

Described as very fudgy, dense, and yummy-- no one will guess the secret ingredient is black beans! A great way to get even more veggie nutrition, this recipe is from Whole Foods Markets, a friend and supporter of Veggie U since our very beginning.

Black Bean Brownies

Yield: 9 brownies 

Ingredients:

1 (15-ounce) can no-salt-added black beans, drained and rinsed

3 large eggs

1/3 C melted butter, more for the baking pan

1/4 C cocoa powder

1/8 tsp salt

2 tsp pure vanilla extract

1/2 C plus 2 tablespoons cane sugar

1/2 C semi-sweet chocolate chips

1/3 C finely chopped walnuts

Directions:

Preheat the oven to 350┬░F. 
Butter an 8x8-inch baking pan. Let kids "dump" the black beans, eggs, butter, cocoa powder, salt, vanilla and sugar into the bowl of a food processor and blend until smooth. Remove the blade and gently stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan.

Bake 30 to 35 minutes, or until just set in the center. Cool before cutting into squares. Enjoy!
